Yogurt bark with berries

This recipe takes yogurt to the next level. It is great as a quick snack or for sharing with friends. You can easily store any extra servings in the freezer for up to 2 weeks.

Ingredients

  • 500 mL (2 cups) lower fat plain yogurt
  • 45 mL (3 tbsp) maple syrup or honey
  • 2 mL (½ tsp) vanilla extract
  • 5 mL (1 tsp) lemon juice
  • 500 mL (2 cups) berries of choice (blueberries, strawberries, or a combination, etc.) 

*if using whole strawberries, chop them up into smaller pieces

Directions

  1. Line a baking sheet with wax paper (or parchment paper) and set aside.
  2. In a large mixing bowl combine yogurt, maple syrup, vanilla, and lemon juice; whisk until thoroughly combined.
  3. Transfer yogurt mixture to previously prepared baking sheet and spread it around to an even thickness.
  4. Top with berries.
  5. Freeze for 2 to 3 hours, or until firm.
  6. Cut or break into pieces and serve immediately.
  7. Store remainder in an airtight container in the freezer, for up to 2 weeks.

Tips

  • Add other fun ingredients such as chopped fruit, unsweetened shredded coconut, cocoa powder, or dried fruit!
  • Swap out fresh berries or fruit with frozen alternatives. 
  • Get the kids involved and have them customize the bark with their own toppings!
  • For added fibre, stir in some chia seeds.
